    3 lb boneless rib roast
    1 T each – rosemary, savory,
    thyme & seasoned pepper
    Salt to taste

    Place seasoned meat on smoker or grill over indirect heat for about an hour. Use cherry wood for smoke. Then place meat over direct heat for about 20 minutes to brown outside and get the meat to the desired degree of doneness. Cook to 135 degrees internal temperature for medium rare, 145 degrees for medium. Remove meat from grill and allow to sit covered in an aluminum foil tent for 20 minutes before carving. Serves 2 to 4.
