    This is a hearty and delicious bread. I use it instead of plain white bread.

    List of Ingredients




    1 1/4 c. warm water (110-115 degrees)
    1 envelope yeast
    1 Tbs. honey
    1 Tbs. extra virgin olive oil
    1 tsp. salt
    1/2 c. buckwheat flour
    2 - 2 1/2 c. bread flour

    Recipe



    Dissolve yeast in water. Add honey, olive oil and salt; mix well. Mix in buckwheat flour. Add bread flour just until a soft dough is formed. Knead until dough is elastic, approx. 10 minutes. Spray a bowl with nonstick cooking spray. Place dough in bowl and coat all sides with cooking spray. Cover and let rise in a warm place until the dough is doubled, approx. 1 hour. Punch dough down.
    Spray a bread pan with nonstick cooking spray. Place the dough in the pan. Cover and let rise until almost doubled, approx. 45 minutes.
    Heat oven to 400 degrees. Bake bread for 30 minutes.
    Remove from loaf pan and cool on a wire rack.
