    Chocolate Zucchini Muffins

    ¼ cup butter, softened
    ¼ cup vegetable oil
    ½ cup unsweetened applesauce
    1 ¾ cups white sugar
    2 large eggs
    2 tsp. vanilla extract
    ½ cup sour milk
    2 ½ cups all-purpose flour
    4 Tbs. cocoa powder
    1 tsp. baking soda
    ½ tsp. cinnamon
    ½ tsp. salt
    2 cups peeled and finely grated zucchini
    ¾ cup chocolate chips

    Recipe



    Preheat oven to 325°. Spray 2 standard muffin pans with nonstick cooking spray. In a large bowl, mix butter, oil, applesauce and sugar until creamy. Add eggs, vanilla extract and sour milk. Blend well. In a separate bowl, mix together flour, cocoa powder, baking soda, cinnamon and salt. Add to the butter mixture and stir by hand to combine. Add grated zucchini and the chocolate chips and stir well. Spoon the batter evenly into the pans, filling each paper 2/3 full. Bake for about 20 minutes, until a toothpick inserted in the center comes out clean or they spring back when lightly touched .
