Chocolate Amaretto Cheesecake

Crust:
7 oz. amaretti cookies
2 Tbs. sugar
5 Tbs. sweet butter
1 oz. unsweetened chocolate
Filling:
6 oz. semisweet chocolate
7 oz. amaretti cookies
4 oz. almond paste
1/3 cup amaretto liqueur
¼ cup sugar
1 ½ lbs. cream cheese, room temp.
4 large eggs
½ cup heavy cream
Recipe
For the crust: Crush the amaretti. Butter the springform pan. Sprinkle some of the amaretti on the pan. Melt the butter and chocolate together. Add the sugar and remainder of the amaretti to the mixture. Mix together. Press into the bottom of the springform pan. Put in the refrigerator while mixing the filling.
For the filling: Melt the chocolate. Slowly mix the amaretti in. Set aside. Cream the cream cheese and almond paste until smooth. Add the sugar, heavy cream and eggs. Mix together. Slowly add chocolate mixture to the cream cheese mixture. Break up the amaretti cookies coarsely and add to the cream cheese mixture.
Pour into the springform pan. Bake at 350 degrees for 45 minutes or until the center is still jiggly. Cool.
Slide amaretti cookie ~1” away from outer edge into cheesecake. Serve.
