    Royal Marble Cheesecake

    Source of Recipe

Adapted from Dora Einstein’s recipe in Pillsbury: Best of the Bake-Off Cookbook, 2004

    List of Ingredients

    Crust
    ¾ cup flour
    2 Tbs. sugar
    Dash salt
    ¼ cup butter
1 cup semi-sweet chocolate chips, melted

    Filling
    24 oz. cream cheese, softened
    1 cup sugar
    ¼ cup flour
    2 tsp. vanilla
    6 eggs
    1 cup nonfat sour cream

    Recipe

Heat oven to 400 degrees. In small bowl, combine ¾ cup flour, 2 Tbs. sugar and salt. Using pastry blender or fork, cut in butter until mixture resembles coarse crumbs. Stir in 2 Tbs. of the melted chocolate. Reserve remaining chocolate for filling. Cut a piece of parchment paper to fit into the bottom of a 9” springform pan. Press crust mixture in bottom of springform pan. Bake at 400 degrees for 10 minutes or until very light brown. Remove from oven. Reduce oven temperature to 325 degrees.
In large bowl, beat cream cheese and 1 cup sugar until light and fluffy. Add ¼ cup flour and vanilla; blend well. At low speed, add eggs 1 at a time, beating just until blended. Add sour cream; mix well. Place 1 ¾ cups filling mixture in medium bowl; stir in reserved melted chocolate. Pour half of plain filling over crust. Top with spoonfuls of half of the chocolate filling. Cover with remaining plain filling, then with spoonfuls of remaining chocolate filling. Using table knife, swirl chocolate filling through plain filling.
Place foil around the springform pan. Place the pan in a roasting pan. Put hot water in the roasting pan until it comes halfway up the side of the springform pan. Bake at 325 degrees for 60 to 70 minutes or until center is almost set. Remove from the roasting pan. Cool 10 minutes; cut around the edge of the cheesecake. Cool 2 to 3 hours. Refrigerate.
