    Christmas Cookies 2005

    List of Ingredients




    Cookies:
    1 cup butter, softened
    ¾ cup sugar
    2 tsp. vanilla
    ¼ tsp. rum flavoring
    1 egg
    2 ¾ cups flour
    1 tsp. nutmeg
    ¼ tsp. salt
    Sugar

    Frosting:
    1/3 cup butter
    1 tsp. vanilla
    ¼ tsp. rum flavoring
    2 cups powdered sugar
    2 Tbs. half-and-half, light cream or milk
    Ground nutmeg

    Cookies: In a large bowl, beat the butter for 30 seconds. Beat in the sugar, vanilla and rum flavoring. Beat until combined, scraping bowl occasionally. Beat in egg. In a large bowl, combine flour, nutmeg and salt; gradually beat flour mixture into butter mixture. Cover and chill about 1 hour or until dough is easy to handle.
    Preheat oven to 350 degrees. Sprinkle a sheet of waxed paper with sugar. On the waxed paper, shape dough into ½” diameter logs. Cut logs into 2 ½” portions. Place portions 1” apart on an ungreased cookie sheet. Bake for 10 to 12 minutes or until bottoms are lightly browned. Transfer cookies to a wire rack to cool.
    Frosting: In a medium bowl, beat the butter for 30 seconds. Beat in the vanilla and rum flavoring. Beat in powdered sugar and half-and-half. Spread frosting on tops and sides of cookies. Using tines of a fork, mark frosting to resemble bark; lightly sprinkle with additional nutmeg.
