    Pepper, to taste

    Mushroom Sauce:
1 ½ cups sliced cremini mushrooms (or any mushroom of your choice)
    1 ½ Tbs. flour
    1/3 cup sweet Marsala wine
¼ cup minced sweet onion (like Vidalia)
    Beef broth (from above)
    2 tsp. Worcestershire sauce
    1 Tbs. tomato paste
    1/8 tsp. dried rosemary, chopped
    ½ tsp. Dijon mustard

    Recipe

Heat oven to 325 degrees. Put steaks and seasonings in a roasting pan. Cover tightly and put in oven for 3 hrs., turning once after 1 ½ hrs.
After steaks are done, make the sauce.
Combine mushrooms and flour in a bowl; toss. Combine the wine, onions and balsamic vinegar in a skillet. Bring to a boil; cook until thick (about 3 minutes).
Reduce heat to medium. Add the broth from the cooked steaks, Worcestershire, tomato paste, and rosemary; cook 1 minute. Add mushroom mixture and cook 3 minutes, stirring constantly. Stir in mustard. Pour over the steaks and serve.
