    Spiral Pasta with Fresh Tomatoes

    This light recipe will help you use your summer bounty of tomatoes.

    List of Ingredients




    8 oz. spiral pasta
    8 oz. sliced fresh mushrooms
    1/2 cup sliced green onions, use both white and green parts
    2 garlic cloves, minced
    2 Tbs. olive oil
    12 large Roma tomatoes, peeled and chopped
    4 tsp. dried basil
    2 tsp. dried oregano
    1/2 tsp. dried marjoram
    1/2 cup dry white wine
    1/4 cup minced fresh parsley
    salt and pepper to taste

    Recipe



    Cook the pasta in a pot of boiling salted water while preparing the following.
    Heat olive oil in a skillet. Add the mushrooms and onions. Cook until soft. Add the tomatoes, basil, oregano, marjoram and wine to the skillet. Cook until the tomatoes are soft. Add the cooked pasta and parsley to the tomato mixture. Mix together.
