Beet Pickles

6 ½ lbs. beets
3 cups cider vinegar
4-5 cups sugar
1 tsp. pickling spicesRecipe
Cut off tops of beets, leaving 1” stems. Cook until tender. Drain and cool enough to be handled; slip off skins and stems. Put in a pot and add vinegar, sugar and spices. Heat to simmering. (Pickling syrup should barely cover beets.) Pack into hot, sterilized jars. Pour syrup to just cover beets and seal immediately.
