    Pasta with Herbed Feta and Olives

    Makes 4 servings.


    List of Ingredients


    • 2 large beefsteak tomatoes, diced
    • 1 package (4 oz.) crumbled feta cheese with herbs
    • 1/3 cup oil-cured olives, chopped
    • 1/4 cup chopped flat-leaf parsley
    • 2 tablespoons extra-virgin olive oil
    • 1/2 tsp. freshly ground pepper
    • 1/4 tsp. salt
    • 1 small garlic clove, minced
    • 2 packages (9 oz. each) fresh linguine


    Instructions


    1. In large serving bowl, combine tomatoes, feta, olives, parsley, oil, pepper, salt, and garlic.
    2. Cook pasta according to package directions; add to bowl and toss well.
