Chicken with Garlic Butter
Here's a quick to fix chicken dish that's also low carb.

List of Ingredients
- 2 tablespoons olive oil
- 4 boneless skinless chicken breasts, cubed
- 12 oz sliced mushrooms
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon butter
- 1/4 C chicken stock
Instructions
- Heat oil in a large skillet over high heat. Add chicken pieces and mushrooms and stir-fry, for about 3 minutes.
- Reduce heat to medium-high and add garlic. Cook for about a minute before adding butter, parsley and chicken stock.
- Cook for 2-3 minutes more before serving over rice.
