    Recipe Introduction


    Mojitos are my drink of choice. I first tried mojitos while listening to Cuban bands in one of the many cafes around Havana. A mojito made correctly is the best cocktail in the world!


    List of Ingredients


    • SIMPLE SYRUP - 1/2 cup sugar and 1/2 cup water
    • 8 (or more) fresh mint leaves
    • Crushed Ice
    • 2 fl oz white rum (Havana Club is the best)
    • Club Soda
    • 1/2 fl oz dark rum
    • Mint leaves or sprigs to garnish


    Instructions


    1. First make the simple syrup by combining the 1/2 cup sugar and 1/2 cup water in a small saucepan and stir over a low heat until the sugar dissolves.
    2. Remove from heat and allow to cool and place in a clean bottle or glass jar and refrigerate. This will keep indefinitely and is a good base for many cocktails.
    3. THE MOJITO
    4. In a tall tumbler combine the mint, syrup and lime juice.
    5. Muddle or pound the mint into the juice and syrup. If you do not have a muddler use the handle end of a wooden spoon. Muddle until the syrup is greenish and the leaves are well broken into bits.
    6. Fill the glass with crushed ice.
    7. Fill the glass ALMOST to the top with club soda.
    8. Carefully float the dark rum on the top.
    9. Serve at once - makes one MOJITO!


    Final Comments


    This recipe calls for 8 mint leaves - in Cuba the best mojitos have far more than 8 leaves. Feel free to add more as the Cuban bartenders do!
