    Recipe Introduction


    Dee is a friend from Minneapolis and is a great cook. This is her bouillabaisse recipe.


    List of Ingredients


    • 3 Tbsp olive oil
    • 2 large onions, chopped
    • 2 garlic cloves, minced
    • 2 carrots, grated coarsely
    • 6 potatoes, cut into large cubes
    • 1/4 tsp anise seed
    • 1/2 lb scallops
    • 1/2 lb shrimp
    • 1/2 lb whitefish
    • 1/2 lb clams (canned will work)
    • 2 snow crab legs
    • 1 1/2 tsp dried thyme
    • 2 1/2 tsp dried marjoram
    • 1/2 tsp ground saffron
    • 1 lb can tomatoes
    • 2 cups clam juice


    Instructions


    1. Heat oil. Saute onions and carrots.
    2. Add garlic, potatoes and spices.
    3. Saute until potatoes are cooked but still firm (about 15 minutes)
    4. Add tomatoes and clam juice
    5. Simmer for 10 minutes
    6. Add fish and shellfish and continue to simmer another 20 minutes.
    7. Remove crab legs and clean out the meat, then return the meat to the pot.
    8. Simmer - This dish becomes thicker and tastier the longer it cooks.
