Dee's Bouillabaisse

Recipe Introduction
Dee is a friend from Minneapolis and is a great cook. This is her bouillabaisse recipe.
List of Ingredients
- 3 Tbsp olive oil
- 2 large onions, chopped
- 2 garlic cloves, minced
- 2 carrots, grated coarsely
- 6 potatoes, cut into large cubes
- 1/4 tsp anise seed
- 1/2 lb scallops
- 1/2 lb shrimp
- 1/2 lb whitefish
- 1/2 lb clams (canned will work)
- 2 snow crab legs
- 1 1/2 tsp dried thyme
- 2 1/2 tsp dried marjoram
- 1/2 tsp ground saffron
- 1 lb can tomatoes
- 2 cups clam juice
Instructions
- Heat oil. Saute onions and carrots.
- Add garlic, potatoes and spices.
- Saute until potatoes are cooked but still firm (about 15 minutes)
- Add tomatoes and clam juice
- Simmer for 10 minutes
- Add fish and shellfish and continue to simmer another 20 minutes.
- Remove crab legs and clean out the meat, then return the meat to the pot.
- Simmer - This dish becomes thicker and tastier the longer it cooks.
