    Lilly's Sweet Potato Pseudo Souffle

    Recipe Introduction


    This is a recipe Karen passed on from her mom.


    List of Ingredients


    • 2 1/2 cups mashed canned or cooked sweet potatoes. 1 lb - 2oz can or 2 lbs fresh.
    • 1/2 tsp salt
    • dash pepper
    • 2 tbsp butter
    • 10 marshmallows
    • 1 cup chopped pecans
    • 1 tbsp butter
    • 1/2 cup honey


    Instructions


    1. Combine mashed sweet potatoes, salt, pepper and 2 tbsp butter.
    2. Divide the quantity of the mix.
    3. Place 1/2 in a casserole and spread on top the marshmallows over the mixture.
    4. Cover the marshmallow layer with the remaining potatoe mix.
    5. Top with pecans - use more if you really like nuts!
    6. Heat the honey and 1 tbsp of butter in a small skillet over high heat.
    7. Drizzle over the mixture.
    8. Bake at 350 for 20 - 25 minutes.

    Karen was Chris's boss at Dayton's in Mpls. She now lives with her husband in Santa Fe.
