    APRICOT RING WITH GINGERSNAPS

    2 packages gourmet gingersnaps
    1 (8-ounce) package cream cheese, softened
    1 tablespoon sugar
    1 teaspoon vanilla
    2 tablespoons apricot preserves, plus extra for garnish, if desired
    16 dried apricots, minced very small (with scissors)
    1/2 to 3/4 cup finely chopped pecans

    Recipe



    Combine cream cheese, sugar, vanilla and preserves. Add minced apricots and pecans. Spray a small (21-ounce) mold with vegetable coating and fill with mixture. Refrigerate. Unmold and layer gingersnaps around it. Serve it with small spreader or butter knives for guests to use when spreading the mixture on gingersnaps.
