    Shrimp-Cheese Bites

    Tart Shell:
    1-1/4 cup of flour
    1/2 cup butter
    1 egg, beaten

    Filling:
    2/3 cup chopped, cooked shrimp
    2-oz feta cheese, crumbled
    1 egg
    1 egg yolk
    1/2 cup of Half & Half
    2 tsp chopped fresh Basil or 3/4 tsp dried

    Tart Shell: Mix the flour and butter to resemble a coarse cornmeal. Stir in the beaten egg and mix well. Shape into a ball. At this point you can chill the dough. Divide the dough into 24 balls and press on the bottom and up ths sides of each greased mini muffin cup.

    Filling: Divide the shrimp amongst the pastry lined cups. Sprinkle with the cheese. Beat the eggs and the egg yolk in a small bowl. Stir in the 1/2 & 1/2. Add the Basil. Spoon about 1 Tbs into each muffin cup.

    Bake for about 20 minutes at 375ºF.

    Run a spatula around each cup before removing and allow to cool for about 10 minutes. I have used Swiss cheese in the recipe as well. Last time I added a little chopped sauted red pepper.
