    Once you make this easy syrup all you have to do is mix it with some sparkling water for the best ginger ale you've ever tasted. Try adding a little rum for a special "grown-up" treat.

    List of Ingredients




    3/4 cup (180 ml) sliced ginger (no need to peel it)
    2 cups (500 ml) water
    1 cup (250 ml) water
    Sparkling water and ice to taste

    Recipe



    Combine the ginger, water, and sugar in a saucepan and bring to a boil over moderate heat. Lower the heat, simmer for 10 minutes, then let cool to room temperature. Strain and keep refrigerated for up to 2 weeks. To serve, put ginger syrup to taste (about 2 Tbs (30 ml) per serving) in a glass and add sparkling water and ice.

    Makes about 16 servings.
