    Bonnie's Blueberry Muffins

    They are a cross between cake like and muffin like. Nutmeg gives them a really nice flavor. Recipe from Bonnie Ebenhoeh owner of Heritage House in Chesaning, MI; TOH Annual Recipes 1995

    List of Ingredients




    2 c. a.p. flour
    2/3 c. sugar
    1 Tblsp. baking powder
    1/2 tsp. salt
    2 eggs
    1 c. milk
    1/3 c. butter, melted
    1 tsp. ground nutmeg
    1 tsp. vanilla extract
    2 c. fresh or frozen blueberries *if using frozen do not thaw*
    Additional melted butter and sugar

    Recipe



    In a mixing bowl, combine the flour, sugar, baking powder and salt. In another bowl, beat eggs. Blend in milk, butter, nutmeg and vanilla; pour into dry ingredients and mix until just moistened. Fold in blueberries. Fill greased or paper-lined muffin cups two-thirds full. Bake at 375ºF for 20 - 25 minutes. Brush tops with melted butter and sprinkle with sugar. Yield 1 dz.
