    Brown Sugar Breakfast Muffins

    1 1/4 cups quick cooking oats
    1 cup packed brown sugar
    3/4 cup vegetable oil
    2/3 cup milk
    2 eggs, beaten
    1 1/2 cups all purpose flour
    2/3 cups chopped pecans or your favorite nuts
    2 tsp baking powder
    non-stick cooking spray


    Recipe

    Preheat oven to 400ºF. Spray muffin cups with non-stick spray.

    In a large bowl, oats, brown sugar, vegetable oil, milk and eggs. Mix well and let stand 5 minutes.

    Meanwhile in another bowl, combine flour, pecans and baking powder; mix well. Gradually stir oat mixture into flour mixture; blend until moistened.

    Fill muffin cups to rim. Bake 15-20 minutes or until inserted toothpick comes out clean. Remove muffins from cups and cool on wire rack.

    Makes 1 dozen muffins.

    kathyf1: Since they had 3/4 cup oil I wanted to reduce the amount of fat and calories, I substituted 1/4 cup canola oil and 1/2 cup unsweetened applesauce. I also mixed together a little white sugar with cinnamon and sprinkled that on top of the muffins before I popped them in the oven. These are a good hearty filling muffin. I also omitted the nuts.

    DorothyR_in_Malibu: it is a hearty, chewy muffin with the oatmeal. I also left out the nuts & I think it needs 1/4 teaspoon salt, and 1 teaspoon vanilla. Don't get me wrong. This makes a good muffin, but it's bland.
