    Nonstick cooking spray
    1/2 C. yellow cornmeal
    1/2 C. unbleached all-purpose flour
    1 T. granulated sugar
    1 tsp. dry mustard
    1 tsp. baking powder
    1/2 tsp. salt

    1 egg
    1 T. margarine, melted, OR 1 T. vegetable oil
4 reduced-fat turkey franks or regular hot dogs

    Recipe

Preheat oven to 375ºF. Spray five muffin cups generously with cooking spray, or use muffin liners. Fill any empty cups with water.

Combine cornmeal, flour, sugar, dry mustard, baking powder, and salt in a medium-size bowl. Add milk, egg, and margarine. Mix until smooth.

Cut hot dogs into 1-inch lengths. Spoon about 1/4 cup of batter into each prepared muffin cup. Place 3 hot dog pieces in each muffin cup.

Bake for 20 to 30 minutes, until a wooden pick inserted into the muffin comes out clean.

Review Posted by: purplechef_fl: Thanks for HDMac and LuAnn for the recipe! I found this recipe on your post this AM Marcia! Thanks so much! DS just ate a couple and barely came up for air! LOL! The texture of the corn bread was perfect! He really is a picky eater, so I know when he likes something, I keep the recipe! He said it tasted like a corn dog. *Finally a good for him recipe without the frying! LOL! It smells so good in here! Wait till DD's get home! There won't be any left! :) Nice quick and easy snack! :)

Review Posted by: HDMac_WA:CORN DOG MUFFINS – Posted by LuAnn. You can wrap and freeze these muffins individually. Pop one in the lunch box in the morning, and it’ll be defrosted by lunchtime.
