    Chocolate Chip Muffins #3

    1/2 cup sugar
    1/4 cup shortening
    1 egg
    1/2 cup milk
    1/2 teaspoon vanilla extract (I always use extra, but we love vanilla)
    1 cup all purpose flour
    1/2 teaspoon baking soda
    1/2 teaspoon baking powder
    1/2 tsp salt
    2/3 cup minature semisweet chocolate chips

    Recipe



    In a large mixing bowl, cream sugar and shortening until fluffy. Add egg, milk and vanilla; mix well. Combine the dry ingredients and gradually add to the creamed mixture and mix well. Fold in chocolate chips. Spoon about 1 tablespoon of batter into each greased or paper-lined mini-muffin cup.

    Bake at 375ºF for 10-13 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.

    Review: These are my kids' all time favorite muffins. I got the recipe from the TOH BB and want to share it here as well. They almost taste like little bites of chocolate chip cookies. Everyone that tries them, loves them! I always double the recipe when I make them, too. They have always turned out great for me. And, I have also been able to fix them in our toaster oven as well, which is really nice on those hot days that you don't want to warm up the main oven.
