    DEVIL'S FOOD CHOCOLATE CHIP MUFFINS

    2 C flour
    2/3 c unsweetened cocoa powder
    1/2 c sugar
    2 t baking soda
    1/2 t salt
    1 1/3 c milk
    1/3 c vegetable oil
    2 eggs
    1 t vanilla
    1 c semi-sweet chocolate chips, preferable mini chips

    Recipe



    Preheat oven to 400ºF. Lightly butter 12 muffin cups or coat with PAM.

    In a large bowl combine dry ingredients; stir to blend.

    In a seperate bowl whisk together the milk, oil eggs and vanilla until smooth. Add to the dry ingredients, along with 1/2 c of the chocolate chips. Fold until just evenly moistened. Do not overmix.

    Divide batter evenly among muffin cups. Sprinkle the muffins evenly with the remaining chocolate chips

    Bake 20-22 mins til a toothpick comes out clean. Cool on wire rack.

    NOTE: if not using cupcake papers, allow to cool completely before removing from pan.
