Taste of Home's Quick Cooking (July/August 2005) Recipe By: Jodi Rugg of Aurora, Illinois

Review: Posted by: DoveChocolate / I just wanted to let you know these cupcakes turned out beautiful. I was so happy with them. The colors were bold and vibrant. I used the Wilton Icing Colors (gels). I used "Red Red" and Royal Blue. I had a little "Christmas Red" in another bottle, so I did put a little of that in my red mixture. I changed the recipe a little by adding 2 tsp. of almond extract to my cake batter and 1 tsp. of almond extract to the frosting. I would have added another tsp. but I didn't want to make the frosting too runny. I love almond flavoring and that gave the cupcakes a nice flavor.

Please read the recipe carefully. I set out 3 - 1 1/3 C portions, but I still had batter left over, so I remeasured and ended up with 1 2/3 C of batter for each color. Here is where I messed up. I had read where you put 2 T of cake batter in each cupcake liner for all 3 colors. It didn't take long to realize I was running out of batter. So I went back and read the recipe more carefully and noticed where it said 18 cupcakes. So I only ended up with 15 Red, White and Blue ones. The others were all blue or blue and white. I was hesitant to put too much batter in each cupcake for fear of it going over in the oven and ruining the look of the cupcake.

I will end up doing this at Halloween with orange and black. Christmas with red and green. Valentines Day with pink and red. Easter would be beautiful with pastels colors. I would still use a white layer for everything except Easter.
