    1 (15 oz.) box Raisin Bran (7 1/2 cups)

    2 1/2 cups sugar (I used half brown sugar twin and half Splenda)
    5 cups flour (I used 2 cups white wheat - 2 1/2 cups Plain flour - 1/2 cup oatmeal)

    5 tsp. baking soda (that's right)
    3/4 tsp. baking powder
    1/2 tsp. salt
    2 tsps. cinnamon (used Saigon)
    1 1/2 tsps. ground cloves
    1 1/2 tsps. ground nutmeg
    Mix all these ingredients together in a large non-metal bowl (I used one of those LARGE plastic bowls with a cover)

    4 eggs (I beat those in a large meaasuring cup)
    2 tsps. vanilla (add to eggs)
    1 cup canola (or veg.) oil (add to the eggs and mix - then pour over the dry ingredients. Mix slightly.

    1 qt. buttermilk

    Pour the buttermilk over all and mix until moistened well. Do not overmix.

    Preheat oven to 400 degrees. Fill muffin cups (I generally line mine but just grease/spray if you don't) 3/4 full and bake for about 16 minutes - longer if the batter has been refrigerated.

    You can mix the bran cereals - why I measured in cups. I used part Raisin Bran and part Total Raisin Bran - but if you have it - it is very good to use about a cup of All Bran as part of cereal mixture - (I almost never have that on hand) or another high fiber cereal.
    Also - if you are not using the artificial sugars (the muffins taste fine with them) I would use half brown - at least. If you do that - you might just be able to "cut" the sugar a bit more.

    Also whole wheat flour would also work great with this as "part" of the flour - today I was out. Also you can use other flours - bran, oat, (the oatmeal also works great for a bit of the flour).
