    Muffins:
    1-3/4 cups flour
    1-1/2 tsp. baking powder
    1/2 tsp. salt
    1/2 tsp. nutmeg
    1/3 cup vegetable oil
    3/4 cup sugar
    1 egg
    3/4 cup milk

    Coating: (I didn't need near this much of the coating!):
    1/2 cup butter or margarine
    3/4 cup sugar
    1 tsp. cinnamon

    Recipe



    Preheat oven to 350ºF. In a small bowl, combine flour, baking powder, salt & nutmeg.

    In another bowl, combine thoroughly the oil, sugar, egg and milk. Add to the dry ingredients and stir only to combine.

    Bake for 20 to 25 minutes ( or 15 mins. for mini muffins) . As soon as they are done, remove from the oven, tip the muffin tin over and knock the muffins out. While they are still hot, dip the muffins in the melted butter and then in the sugar mixture to coat completely. (I just did the tops.) Best served warm.

    Coating:
    Melt butter or margarine in a small bowl in the microwave or in a saucepan on the stove, but do not overheat. Combine sugar and cinnamon in a small bowl.

    Review posted by: DorothyR_in_Malibu - OK, I just made these, and the description is right, they do kinda taste like a cake donut (without the frying). I liberally sprinkled cinnamon-sugar on top before baking instead of dipping in butter after baking (just didn't want to deal with all that butter!). I made in mini muffin pan and they were done at 15 minutes. It makes a dense crumb, very delectable!

    Next time (maybe they'll all be gone today after the kids and hub get after them...) I'll increase the nutmeg to 3/4 tsp. just because I like it, and maybe 1 tsp. vanilla, just because. The nutmeg was subtle, IMHO. Very good. They take all of 5 minutes to assemble, from ingredients you have on hand. Make them!
