    1 cup firmly packed brown sugar
    1/4 cup butter or margarine, softened
    1 egg
    2 cups self-rising flour
    Milk
    1/2 cup chopped canned cherries (reserve juice)
    1/2 cup chopped walnuts

    Recipe



    Preheat oven to 350°F. Spray a 9x5-inch loaf pan with non-stick vegetable spray.

    In a large mixing bowl, cream brown sugar and butter until light and fluffy. Add egg; beat until well blended.

    In a 1 cup measure, combine cherry juice with enough milk to make 1 cup. Add flour and cherry juice mixture alternately with flour to creamed mixture, beating well after each addition. Stir in cherries and walnuts. Pour into prepared loaf pan.

    Bake for 60 minutes or until a tester inserted in the center comes out clean. Cool in loaf pan for 10 minutes. Remove from loaf pan; cool completely on a wire rack.
