    EGGNOG BREAD

    Recipe Introduction

    This is delicious to make during the Christmas Holidays. Bake in mini loaf pans and wrap in holiday plastic wrap to give for gifts.

    List of Ingredients

    2 eggs
    1 cup sugar (or sugar substitute)
    1 cup dairy eggnog
    1/2 cup butter, melted
    1 1/2 tsp. nutmeg
    2 tsp. rum extract
    1 tsp. vanilla
    2 1/4 cups flour
    2 tsp. baking powder
    1/2 t. salt

    Recipe

    Preheat oven to 350º. Grease the bottom only of 9 x 5-inch loaf pan.

    Beat eggs, add sugar, eggnog, butter, rum and vanilla. Blend well.

    Add flour, baking powder, salt and nutmeg. Stir until just moistened.

    Pour into greased pan.

    Bake at 350ºF. for 45-50 minutes or until toothpick comes out clean. (Adjust for baking in mini loaf pans.*)

    Cool 10 minutes. Remove from pan.

    Cool bread completely before slicing.

    * If desired, recipe can be baked in two 5 3/4 x 3 1/4-inch disposable foil or metal loaf pans. Grease bottoms only of pans. Bake at 350ºF. for 35 to 40 minutes.
