    Recipe Introduction

    (Yield: 2 loaves)

    List of Ingredients

    2 medium lemons
    2 medium oranges
    4 1/2 cups bread flour
    1 Tablespoon baking powder
    1 1/2 teaspoons salt
    2 cups sugar
1 1/2 cups butter or margarine
    6 eggs, lightly beaten
    1 cup milk
    1/4 cup sugar

    Recipe

Preheat oven to 350°F. Spray 2 9x5-inch loaf pans with non-stick vegetable spray.

From lemons: grate 2 tablespoons rind and squeeze 2 tablespoons juice.

From oranges: grate 2 tablespoons rind and squeeze 10 tablespoons juice.

In a large mixing bowl, combine flour, baking powder, salt, and sugar. Cut in butter until mixture resembles coarse crumbs. Stir in lemon and orange rinds. In a small bowl, combine eggs, milk, and 8 tablespoons orange juice; add to flour mixture, stirring until flour is just moistened. Spoon batter into prepared loaf pans; smooth tops.

Bake for 1 hour or until a tester inserted in the center of the loaves comes out clean. Remove from pans; cool completely on a wire rack.

In a small saucepan over medium heat, bring lemon juice, remaining orange juice and sugar to boiling. Cook, stirring constantly, until slightly thickened. Brush mixture evenly over tops of loaves.
