    Gaudrey's Pineapple Bread

    3 eggs, beaten
    1 large can crushed pineapple in its own juice
    1 box yellow cake mix

    Recipe



    Heat oven to 350°. Combine eggs and pineapple. Do not drain pineapple. Add dry cake mix and beat on low speed until moistened. Then beat on medium speed for 3 minutes. Pour into two 8x8x4 inch greased or sprayed loaf pans.

    Bake 45 to 50 minutes or until browned and the top springs back when lightly touched with the fingertips. Cool in the pan for 10 minutes. Turn out to cool completely on a rack.

    If a glaze is desired, melt 1/2 can of prepared frosting (any flavor you prefer) for 7 seconds on high in a microwave oven. Do not let it liquify, but melt just enough so you can drizzle it over the cooled loaves. It will harden as soon as it cools, about 10 minutes. I like White Chocolate Almond or plain White Chocolate frosting.
