    2 cups buttermilk baking mix (Bisquick)
    1 cup sour cream (I used low fat)
    4 oz. finely grated sharp Cheddar cheese (plus more for sprinkling on top)
    7 Tbsp. salted butter, melted (divided)
    1/2 to 1 tsp. garlic salt, optional (I used it - 1 tsp. - and highly recommend it!)

    Preheat oven to 400ºF. Lightly grease a 12 cup muffin tin or coat with nonstick cooking spray.

    In a medium bowl, stir together baking mix, sour cream, 4 oz. cheese, 6 Tbsp. of the melted butter and garlic salt, if using, until dry ingredients are moistened.

    Divide batter evenly among muffin cups. Gently brush tops with remaining melted butter (1 Tbsp.) and sprinkle lightly with additional cheese.

    Bake for 9-11 minutes, or until lightly browned and they test done. (I ended up baking them for about 15 minutes.)
