Sweet Yam Biscuits

Recipe Introduction
Prep time: 10 minutes; Cook time: 10 to 15 minutes; These are becoming pretty popular on the menus of many Southern restaurants...this looks like a good recipe.
List of Ingredients
2 cups flour
1/2 cup brown sugar
4 tsp. baking powder
1/4 tsp. salt
1/2 cup butter
1 cup cooked and mashed yams (not sweet potatoes!)
1/2 cup pecans, chopped and lightly toasted
1 to 2 tbsp. milk Recipe
Preheat oven to 425�F. In a medium bowl, stir together flour, brown sugar, baking powder and salt. Cut in butter with a pastry blender or 2 forks until crumbly. Stir in yams, pecans and enough milk to make a stiff dough. Roll out on a lightly floured board and cut into desired shapes. Place on a lightly greased baking sheet and bake for 10 to 15 minutes or until cooked through and lightly browned on top. Serve warm with butter.
Makes 12 biscuits.

Review posted by: DorothyR_in_Malibu: These are slightly sweet (not super sweet like a breakfast roll), wonderful light orange color, great light yam taste, perfect alongside roasted chicken for dinner, and a snap to make. Perfect! I might decrease the sugar by 1 tablespoon next time, but it's not a huge deal, and for variety I wouldn't hesitate to add an herb for interest, but otherwise, no need to fiddle with them! They're great as-is. We loved them! And I do think they will be good as little sandwiches with ham slices or roasted turkey. In fact, how about the leftover ham from upcoming Easter?
