    6 eggs, beaten
    2 cups skim milk
    4 slices bread, cubed
    1 cup grated low-fat cheddar cheese
    1 pound sausage, browned and drained
    1/2 teaspoon salt
    Pepper to taste

    Recipe



    Pour drained sausage into the bottom of a greased 9x13 pan or dish. Top sausage with cubed bread.

    Beat eggs, milk and salt together. Pour egg-milk mixture over bread. Top with cheese.

    Refrigerate overnight.

    Bake at 350ºF for 30-35 minutes or until a knife inserted into center comes out clean.

    Serves 12. Per serving: 235 calories, 18 g. fat, 353-mg. sodium.

    Variation # 1: Omit sausage. Substitute 12-ounces chopped ham for sausage. Add grated Swiss cheese for cheddar cheese.

    Variation # 2: Omit sausage. Substitute 1 (4-ounce) jar real bacon bits for sausage.
