    1 pound of bacon
    1 Tbs butter
    2 Onions chopped
    2 Cups fresh sliced mushrooms
    4 cups frozen hashbrowns, thawed
    1 tsp salt
    1/4 tsp garlic salt
    1/2 tsp ground pepper
    4 eggs
    1 1/2 cups milk
    1 pinch dried parsley
    1 cup shredded cheddar cheese

    Oven set at 400ºF * (see review). Grease a 9x13" casserole. Cook the bacon until browned. Set aside. In a seperate skillet, melt the butter and saute the onions and mushrooms. Place the potatoes in the bottom of the casserole. Sprinkle with the salt, garlic salt and pepper. Top with the bacon, then the onions and mushrooms. In a large bowl, beat the eggs and the milk and the parsley. Pour over the casserole and top with the cheese. Cover and refrigerate overnight. Bake in a preheated oven for 1 hour or until set. If preparing and baking the same day bake for 45 minutes.

    * I used garlic powder instead of garlic salt, and I also chopped up the bacon. I baked it covered for 30 minutes and uncovered lowered the temp and baked for another 20 minutes. The bottom seemed to brown rather quickly, so the next time I will cook it at 375 instead of 400.

    I also made only 1/2 of the recipe and it worked out fine, except that there was NOT enough!
