    1 pound breakfast sausage
    1 onion, finely chopped
    1/4 cup celery, finely chopped
    1/2 cup green pepper, finely chopped
    1/4 cup parsley, finely minced
    3 cloves garlic, minced
    2 cups uncooked white rice
    4 cups chicken broth
    salt to taste
    1/2 teaspoon ground black pepper
    Cayenne pepper to taste (omit if you can't handle spicy)
    1 cup thinly sliced green onions

    Recipe



    Saute sausage over medium heat, stirring constantly, until meat begins to brown (about 5 minutes). Add onion, celery, green pepper, parsley and garlic, stirring constantly, (about 3 minutes).

    Add rice, broth, salt, pepper and cayenne pepper. Stir well to mix all together. Bring to a boil, then reduce heat to simmer. Cover and cook about 20 minutes, until rice has absorbed liquid. Sprinkle with green onions and serve.
