    Shrimp Breakfast Casserole

    2-1/2 c. cooked grits
    1 pound cooked shrimp
    1-1/2 c. shredded cheddar cheese
    2 eggs, beaten
    1/4 c. milk
    2 cloves garlic, minced
    1 green onion, sliced
    1 tsp. salt
    1/4 tsp. black pepper

    Recipe



    Heat oven to 350 degrees. Grease a 2 quart baking dish and set aside.

    In large bowl, combine the cooked grits, 1 cup of the cheese, eggs, milk, green onion, garlic, and salt and pepper. Stir in shrimp. Spoon mixture into prepared baking dish. Sprinkle top with remaining cheese.

    Bake until set, about 25 minutes.

    Makes 6 servings.
