    Cherry Almond Upside-Down Cake

    1 cup drained and chopped maraschino cherries
    1/2 cup sliced or slivered almonds
    1 package (18.25 oz.) chocolate cake mix, mixed according to the package directions
    4 ounces cream cheese, softened
    1/4 cup (1/2 stick) butter, melted
    1 cup confectioners’ sugar

    Preheat oven to 350ºF. Spread the cherries evenly over the bottom of a 9” x 13” baking dish that has been coated with nonstick baking spray and floured. Sprinkle the almonds over the cherries, then pour the prepared cake batter over the cherries and almonds.

    In a medium-sized bowl, combine the cream cheese and melted butter and beat with an electric beater until creamy. Add the sugar and beat until smooth. Starting 1 inch from the edge of the baking dish, drop the mixture in 12 equal spoonfuls evenly over the cake batter, pushing the cream cheese mixture into the batter.

    Bake for 45 to 50 minutes, or until a wooden toothpick inserted in the center comes out clean. Cool for 25 to 30 minutes, then invert onto a platter; cut and serve when completely cooled.

    Note: To bring out the flavor of the almonds, lightly toast them in a 350ºF oven for a few minutes before using as directed.
