    1 pkg. lemon cake mix (I use Duncan Hines)
    1 sm. pkg instant lemon pudding
    1/4 c. key lime juice
    4 eggs
    1 c. oil
    3/4 c. water
    1 tsp. lime extract*
    a few drops of green food coloring

    Recipe



    Mix all well and bake in bundt pan - you know, 350 degrees til it's done - I have no idea how long, start checking it with a toothpick after 30 minutes. Cool on a rack for a bit, then make a glaze of:

    2 c. powdered sugar
    1/3 c. key lime juice
    2 T. butter, melted

    Poke holes in the cake while it is still in the pan, and pour the glaze over. Let sit in the pan until the glaze is absorbed, then turn out onto a plate. Will be brown like any other cake on the outside, but a beautiful green on the inside. I've used Wilton paste coloring, too.

    And I cannot TELL you how good and moist it is!!!

    *BTW, I've never been able to locate LIME EXTRACT, so I have always just left it out with no problem.
