    Lemon Sheet Cake with Cream Cheese Icing (with a Strawberry variation)

    List of Ingredients

    1 box lemon cake mix
    4 eggs
    1 can lemon pie filling

    Icing:
    8 oz. cream cheese, softened
    1/2 cup butter, softened
    3 1/2-4 cups powdered sugar, sifted
    1 1/2 tsp. vanilla
    zest of one lemon
    2-3 T. half & half

    Recipe

    Beat together cake mix and eggs. Fold in pie filling. Pour into a greased/floured jelly roll (15" x 10") pan. Bake at 350ºF for 18-20 min.

    Spread on icing when cake has cooled.

    Icing: Beat together cream cheese and butter. Add powdered sugar, vanilla, lemon zest. Add as much half&half as needed to make a fluffy icing.

    Paulette's Changes:

    1 box Strawberry Cake Mix
    1 can Strawberry Pie Filling, DIVIDED
    4 cups Powdered Sugar

    Omitted:
    1-1/2 tsp Vanilla
    zest of one Lemon
    2-3 Tbsp Half & Half

    Because the can of Strawberry Pie Filling was larger than a can of Lemon Pie Filling - I measured out 1/4 cup of the Strawberry Pie Filling and set aside and added the remaining filling to the cake. When I made the icing, I replaced the omitted items with the 1/4 cup of Strawberry Pie Filling and it turned a pretty shade of pink and tasted delicious!
