    Peanut Butter Crunch Cake

    veggie oil to spray cake pan with
    1 package (18.25 oz) plain yellow cake mix
    1 1/3 cups water
    1/3 cup crunchy or smooth peanut butter
    1/3 cup veggie oil
    3 large eggs

    Topping:
    2/3 cup light brown sugar
    1/4 cup heavy whipping cream or evaporated milk
    1/4 cup peanut butter either smooth or crunchy
    4 tablespoons butter at room temp
    1 cup chopped peanuts

    Preheat oven to 350ºF. Spray 9x13 pan then dust lightly with flour.

    Place cake mix, water, peanut butter, oil and eggs in a large mixing bowl Blend with mixer on low for 30 seconds. Stop scrape sides; increase speed on mixer to medium and beat for 2 minutes. Batter should be well combined. Pour into pan and smooth out.

    Bake for 32-37 minutes or until tooth pick comes out clean. Remove from oven when done & cool slightly.

    Preheat broiler. Prepare topping: place brown sugar, cream, peanut butter & butter in mixer bowl. Mix.

    Spread on top of hot cake. Place under broiler for 45 seconds to 1 minute. Don't overcook. It should be bubbly on top. Sprinkle with the peanuts when done. Let cake rest ten minutes then slice and serve.
