    Pumpkin Sheet Cake With Caramel Icing

    1 pkg (18.25 oz) Duncan Hines Spice Cake mix
    3 large eggs
    1 cup water
    1 tsp. pumpkin pie spice
    1 cup solid pack pumpkin (not pumpkin pie mix)

    Recipe



    Heat oven to 350ºF. Grease and flour 17 1/2 x 12" jelly roll pan.

    Combine cake mix, eggs, pumpkin pie spice and water in bowl. Mix on med speed for 2 minutes. Add in pumpkin and mix till just combined. Pour into prepared pan and bake about 15 minutes or till it tests done.

    Allow to cool 10 minutes, then spread HOT caramel icing over the cake.

    Caramel Icing:
    1/2 c (1 stick) butter, melted
    1 c brown sugar
    1/3 c evaporated milk
    1 tsp vanilla
    2 cups powdered sugar

    Melt butter in medium sized saucepan, stir in brown sugar and mix till dissolved. Bring to a boil and cook, stirring constantly for 2 minutes. Add milk and vanilla, continue to stir about 30 seconds. Remove from heat and stir in powdered sugar. Immediately pour over cake and spread quickly. This gets firm really fast.
