    South Carolina Fresh Peach Cake

    List of Ingredients

    2 C flour, divided
    1 t baking soda
    1 t salt
    1 t cinnamon
    3 eggs, well beaten
    1 3/4 C sugar
    1 C vegetable oil
    2 C sliced fresh peaches
    1/2 C chopped pecans
    whipped cream

    Recipe

    Combine 1 1/2 C flour, soda, salt, and cinnamon; mix well, and set aside.

    Combine eggs, sugar, and oil; beat until smooth. Add flour mixture; beat at low speed of electric mixer just until blended (batter will be thick). Dredge peaches and pecans in remaining 1/2 C flour; gently fold into batter. Spoon batter into a greased and floured 13x9 baking pan.

    Bake at 375° for 50 minutes or until a wooden pick inserted in the center comes out clean. Cool completely.

    Cut into 3" squares to serve; garnish with a dollop of whipped cream.

    Other kinds of fruit and nuts can be substituted.
