    Watergate Cake & Cover-Up Icing

    1 french vanilla cake mix
    1 small pkg. pistachio instant pudding
    3/4 cup vegetable oil
    3 eggs
    1 cup club soda
    1 cup chopped pecans

    Recipe



    Mix in order given for 2 minutes, folding in the pecans after mixture is well blended. Pour into two greased and floured round cake pans. (I use Baker's Joy) Bake at 350º for 30-35 minutes.

    Cover-Up Icing

    1 pkg. pistachio instant pudding
    1 cup milk
    1 8 oz. Cool Whip
    1 jar maraschino cherries, well drained and halved

    After the cake has cooled, stir the pudding and milk together until thick and well blended. Gently fold in Cool Whip and cherries. Immediately frost cake and store in refrigerator
