    White Almond Sour Cream Wedding Cake

    This is the cake recipe, cut in half:

    1 (18 oz) white cake mix
    1 cup flour
    1 cup sugar
    3/4 tsp salt
    1/1/3 cup water
    1/8 cup oil
    1 tsp vanilla
    1 tsp almond extract
    1 cup sour cream
    4 egg whites at room temperature

    CHOCOLATE BUTTERMILK FROSTING
    1/4 cup butter
    3 1/2 Tbls. unsweetened cocoa powder
    3 Tbls. buttermilk
    2 1/4 cup sifted powdered sugar
    1 1/2 tsp. vanilla

    CAKE: Place all dry ingredients in a large bowl, stir. Add remaining ingredients and beat on medium for 2 minutes. Bake at 325ºF until done.

    FROSTING:
    Combine butter, cocoa and buttermilk in a saucepan. Bring just to the boiling point. Remove from heat. Add vanilla. Slowly add 2 cups of powdered sugar while stirring well. Add remaining powdered sugar until frosting reaches desired consistency. If you don't like the cocoa omit!


    Review by: Cabot - Oh my goodness! It was almost a shame to put frosting on this cake. Marsha posted it recently, and I zeroed in on it. I halved her recipe; made a 9X13. Then I doubled the Chocolate Buttercream Frosting recipe Twinkle shared with us. Oh my goodness. Might get fat, hanging out with you people. I baked mine for 55 minutes, then turned the oven off, leaving the cake inside. It was pretty much flat on top when I took it out of the oven. I cut it in half, because it's going to 2 different places. A chunk fell off. Lucky me! It is absoulutely wonderful. Lynn in Cabot
