    Another Chicken Casserole

    1st layer:
    2 c. butter, melted*
    2 c. crushed Ritz crackers*

    Mix together and place in bottom of casserole pan. Save a small amount for the top layer.

    2nd layer:
    6 chicken breasts

    Cook chicken until tender and done. Shred cooked chicken over first layer.


    3rd layer:
    1 large bag broccoli

    Evenly place broccoli over 2nd layer.

    4th layer:
    2 cans cream of chicken soup
    16 oz. sour cream
    1 cup chicken broth

    Mix together and pour over 3rd layer.

    5th layer:
    Sprinkle the reserved amount of buttery Ritz crackers on top. Bake at 350ºF for 30 minutes.

    Beware: This is good. It is one of her most requested items that she caters. I had it at a 50th anniversary party and I couldn't stop eating it!!!!

This was posted and I just LOVE casseroles so this caught my attention rather fast, and let me tell you.....YUMMO! Everyone gobbled this up and it makes a BUNCH. I had to bake it a little longer and the middle of the casserole (only the broccoli) was still just barely warm and not hot through, so we just ate around the edges, just adjust the baking time. I also used one whole small can of chickne broth instead of using one cup out of a can, and it was just fine. Tasted great, and will be on the list to make again. Thanks Hey__Mom for posting a great recipe!! Tink!

    *I used 1 1/2 sticks of butter and 2 sleeves of crackers and it was about perfect!

    I used a 9x13 in pan...but is VERY tall....much bigger than a typical 9x13. Its the pampered chef stoneware 9x13 baking dish. You know what I mean? Its really deep....I dont think it would fit in a standard 9x13 though. (Someone else reviewed this and said the 9x13 pan was FULL!! She also precooked her broccoli a little.)
