    3 cups cooked chicken breast, cubed
    1 (10 3/4 ounce) can low-fat cream of mushroom soup
    1/4 cup chopped pimento, drained
    1/2 cup chopped celery
    1/2 cup sliced almonds (optional)
    1 small can sliced water chestnuts, drained
    1/3 teaspoon dried parsley flakes
    1/4 teaspoon paprika
    1/4 teaspoon black pepper

    Topping:
    1/2 cup french-fried onion rings, crushed
    1/2 cup low fat cheddar cheese, grated

    Recipe



    In a large bowl, mix together chicken, soup, pimento, celery, almonds, water chestnuts, and herbs. Place ingredients in greased 2-quart dish. Top with cheese and onion rings.

    Bake at 350ºF for 30-35 minutes.

    Serves 6-8. Per serving: 348 calories, 15 g. fat, 11 g. CHO
