CHICKEN BREASTS IN WHITE WINE

6-8 boned chicken breasts
3/4 cup white wine
1 (6 oz.) pkg. Uncle Ben's long grain and wild rice
1/2 cup chopped celery (optional)
1 (3 oz.) can sliced mushrooms, drained
4 Tbsp. butter
1 can cream of chicken soup
2 Tbsp. chopped pimento

Recipe



Prepare rice according to package directions and spread on bottom of a greased casserole. Brown chicken breasts (which have been seasoned) in 4 Tbsp. butter and arrange on top of rice in casserole. To drippings in frying pan, add soup, wine, celery, mushrooms, and pimento. Heat to boiling and pour over chicken and rice. Cover with foil and bake 25 mins. at 350ºF. Uncover and bake another 15 mins.
