CHICKEN DIVAN WITH RICE CASSEROLE

2 T. butter
1 (8 oz.) carton fresh sliced mushrooms
1/2 cup chopped onions
1 lb. boneless skinless chicken breasts (cut into small pieces)
2 cloves garlic, minced (or 1 tsp. jarred minced garlic)
1 can cream of chicken soup
8 oz. Velveeta cheese, diced
2 cups cooked rice, regular or instant but cooked
1 box frozen chopped broccoli, thawed, drained
1/2 cup sour cream
1/4 teaspoon ground black pepper
vegetable cooking spray
2 cups shredded Sargento 4-blend mexican cheese (or cheddar or co-jack)Recipe
Melt butter over med-high heat, add mushrooms. Cook and stir for about 2 minutes. Add onion and chicken pieces. Cook until chicken is just cooked through. Stir in garlic and cook for about a minute longer. Add undiluted chicken soup and velveeta cheese, stir until cheese is melted. Remove from heat and add cooked rice, thawed broccoli, sour cream, and pepper.
