Mom's Chicken Tetrazzini (T&T)

List of Ingredients
1 (3 lb) chicken, cut up
4 c. water
1 1/4 t. salt
1 clove garlic, minced
1 bay leaf
1 (8 oz.) pkg. spaghetti noodles, cooked in chicken broth
1/4 c. pimiento, chopped
1 (15 oz.) can English peas, drained
1 small can sliced mushrooms, drained
1/4 c. oleo (margarine)
1 c. chopped onion
1 c. chopped celery
2 T. flour
6 stuffed olives, sliced
1/4 c. chopped parsley
1 1/2 c. shredded cheddar cheese
1/4 c. almonds, optional
Recipe
Cook chicken in water to which salt, garlic, bay leaf have been added. Dice the cooked chicken and reserve chicken broth.
Heat oleo, parsley, onions and celery until lightly browned. Blend in flour. Add reserved broth until consistency of thick cream. Add rest of ingredients and mix well. (I break spaghetti into pieces and cook in chicken broth.)
Put into a greased casserole dish. Top with cheese and almonds.
Bake at 350º for 30 minutes or until cheese melts.
Serves 8.
