    2 c. cooked, diced chicken
    1 (10 3/4 oz.) can cream of chicken soup
    3/4 c. mayonnaise
    3 hard-boiled eggs, chopped
    2 c. cooked rice
    1 c. diced celery
    1 (4 oz.) can water chestnuts, drained and chopped
    1 T. lemon juice
    1 tsp. dried minced onion
    1/2 tsp. salt
    1/4 tsp. white pepper
    2 c. fresh bread crumbs
    1/4 c. melted butter
    1 c. slivered almonds


    Recipe



    Preheat oven to 350ºF.

    In a large bowl, mix soup, mayonnaise, lemon juice, minced onion and seasonings until creamy. Stir in chopped egg, chicken, rice, celery and waterchestnuts.

    Generously spray a 9x13 inch pan with Pam; spread the chicken mixture evenly into prepared pan.

    In a small bowl, mix bread crumbs with melted butter; sprinkle evenly over casserole.

    Top with slivered almonds and bake for 20 minutes.

    Serves 8.
