    2 cups diced, cooked chicken
    1 can (14 1/2 ounce) diced green chilies and tomatoes (e.g., Rotel)
    1 can fat-reduced cream of chicken soup
    1 medium onion, diced
    1 medium green pepper, seeded and diced
    1 cup grated low-fat cheese
    2 cups crushed corn chips or cheese tortilla chips

    Recipe



    Preheat oven to 350ºF. Lightly grease 9x9 casserole dish. Crumble chips and cover bottom of dish, reserving some for topping. Mix chicken with tomatoes, soup, and vegetables.
    Spread over chips. Sprinkle top with grated cheese. Add remaining chips. Bake until bubbly hot.

    Note: Can be cooked at least partially in microwave for 10-12 minutes.
